Chocolate Covered Katie’s pumpkin pie with coconut ice cream
It’s a “one bowl” pumpkin pie recipe that takes just minutes to prepare. Just stir everything together in a mixing bowl, pour into a pan, and let the oven do the work.
With all the calories saved, you can easily have multiple slices… or pile it high with whipped cream or your favorite ice cream. I like to top it with homemade coconut ice cream for the ultimate Thanksgiving dessert.
Impossible pumpkin pie
Ingredients
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 1 teaspoons pumpkin pie spice
- 1/2 tsp salt
- 1/3 cup flour, such as spelt, oat, almond, white, sorghum, or whole wheat
- 1/3 cup maple syrup or sugar (or sweetener of choice, liquid or granulated)
- pinch uncut stevia OR 2 additional tablespoons sugar of choice
- 1 (15-ounce) can pumpkin puree
- 3/4 cup + 2 tablespoons milk of choice
- 2 tablespoons oil OR omit and increase milk to 1 cup
- 2-1/2 teaspoons pure vanilla extract
- 1 tablespoon ground flax or 2 teaspoons cornstarch or 1 teaspoon Ener-G (optional)*
*The pie will be a bit delicate (less firm) without the final optional ingredient, which is fine as long as you handle it with care or wish to serve it in a bowl.

- 1 1/2 cup canned coconut milk
- 1/2 cup additional coconut milk OR milk of choice

- 1 1/2 teaspoon pure vanilla extract
