Cream cheese mashed potatoes

A recipe inspired by Divas Can Cook

The humble potato is one of the world’s most versatile foods. You can serve them up fried, boiled, baked or sautéed. You can make them into a cold salad, or flatten them into a pancake. But simple mashed potatoes are quite possibly the ultimate comfort food.

Here's a Thanksgiving recipe from Food Blogs Star Monique Kilgore of Divas Can Cook! See more from Monique's holiday menu here.

Monique’s Cream cheese mashed potatoes

When the weather turns cool, nothing tastes quite as satisfying as your favorite roasted meat, served with seasoned veggies and a big heap of whipped potatoes. Monique’s recipe for this comfort classic features a few decadent additions to tantalize your taste buds.

Cream cheese mashed potatoes

Monique first infuses the potatoes with flavor by boiling them in chicken broth until they reach peak tenderness. Then, she mashes them by hand until they’re super-smooth and creamy. Then comes lots of butter, half–and-half and cream cheese for a creamy goodness overload.

To finish off this picture-perfect side, she allows a few golden pats of butter to melt on top. It’s a thing of beauty.

Cream cheese mashed potatoes
