The Pioneer Woman's chocolate peanut butter pie

Instructions

Crust

  1. Preheat the oven to 350 F. degrees.
  2. Using a food processor, add the cookies and pulse until cookies are finely ground.
  3. Pour crumbs into a medium bowl.
  4. Pour the melted butter over the top of the crumbs, stirring until well combined.
  5. Press into a pie pan and bake 5 - 7 minutes, or until well set.
  6. Remove from the oven.
  7. Set aside and allow to cool completely.

Filling

  1. Place the peanut butter and cream cheese in a large bowl.
  2. Using a hand mixer, beat the peanut butter with the cream cheese until smooth.
  3. Add powdered sugar and continuing mixing until smooth.
  4. Add in whipped topping and continue to beat until very smooth.

Assembly

  1. Pour the filling into the pie crust, smoothing out the top with a knife or spatula.
  2. Sprinkle with dry roasted peanuts.
  3. Place in refrigerator and chill for at least an hour before serving.
