Citrus, berry and feta cheese salad
Yield 4 servings
Ingredients
- 1 head romaine lettuce, washed and chopped into bite-size pieces
- 1 orange, seedless and sectioned
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1/2 cup raspberries
- 4 tablespoons crumbled feta cheese
- 4 tablespoons sliced almonds
- 1 teaspoon Dijon mustard
- 1 tablespoon honey
- 2 tablespoons balsamic vinegar
- 1/4 cup olive oil
- 2 tablespoons Meyer lemon juice
- Salt and pepper to taste
- 1 Meyer lemon, peeled and sliced
Instructions
- Divide romaine lettuce, orange sections, blueberries, blackberries, raspberries, feta cheese and almonds between two plates or bowls.
- Place mustard, honey, balsamic vinegar, olive oil, lemon juice, salt and pepper into glass cup. Whisk until blended.
- Just prior to serving, pour vinaigrette over salad.
- Garnish with lemon slices.
- Serve.
