But the secret ingredient is the almond paste, tucked away at the bottom of the pie dish. You may not see it (it’s being pressed into the pie shell in the photo below), but you will taste the difference! The delicate almond flavor enhances the rest of the pie without being at all overpowering.

It’s really the combination of tastes and aromas — from the cranberries and apples, the cinnamon and the nutmeg, the almond paste and the flaky crust — that make this pie a real winner.

One note: While the lattice-top on this cranberry & almond apple pie is really pretty, it can be a little tough to get right.

During the amount of time needed for filming and under our studio lights, the dough warmed quickly, so we couldn’t quite stick to Sally’s big rule: “Remember, cold pie dough is successful pie dough. And I can’t stress that enough.”

When this pie comes together, it looks phenomenal, tastes amazing, and will probably become one of those desserts you’re asked to make again, year after year.
