With so many ingredients, we’re not saying this recipe is going to be easy… we’re just saying it’s going to be worth it! This entire recipe is homemade from scratch, so if green bean casserole is what you’re contributing to a Thanksgiving potluck, go all out with this recipe made with bacon and fat and garlic and thyme infused mushrooms, which turn into a decadent chunky mushroom cream sauce!

Homemade from Scratch Green Bean Casserole


  • 16 ounces fresh green beans (or frozen.. but please not canned) ends trimmed
  • 8 ounce package crimini mushrooms, sliced
  • 1/2 + 1 c. chicken/vegetable stock
  • 1/4 c. white wine
  • 1/4 c. flour
  • 1/2 onion, minced
  • 6 cloves garlic, minced
  • 2 Tbsp salted grassfed butter
  • 1 Tbsp bacon fat
  • 1 Tbsp olive oil
  • 1/2-3/4 c. coconut milk
  • 3 sprigs of thyme
  • 3 shakes red pepper flakes
  • 1/2 tsp sea salt
  • 1/4 + 1/8 tsp freshly ground black pepper
  • 1/8 tsp freshly grated nutmeg
  • 1/4 c. flour
  • 1/2 c. panko bread crumbs
  • 1/4 c. parmesan cheese
  • 2-3 Tbsp salted grassfed butter, cubed
  • 1/3 c. grapeseed oil for frying
  • 2 large shallots, sliced
  • 1/4 -1/2 cup flour for tossing, optional
