Now you can have your pie, and eat it too — especially if it’s a healthy vegan chocolate pecan pie. Eating vegan (or just healthfully) no longer means missing out on your favorite treats. This recipe, inspired by Chocolate Covered Katie, still lets you eat clean while enjoying a decadent classic.
Although pecan pie is a quintessential southern dessert, it has become an American classic, especially around the holidays. It has been popular since the early 1900s.
ALSO TRY: Vegan dairy-free whipped cream
Chocolate adds a twist to the traditional recipe, either blended into the pie base itself, as this recipe does, or stirred in as chunks. Either way, it’s a perfectly balanced dessert, with crunchy pecans providing a satisfying contrast to the smooth filling.
Silken-firm tofu is the base, and maple syrup and molasses add the rich, smokey taste we all love about pecan pie. The cocoa adds another level of decadence.
That this pie is delicious and healthy is almost unfathomable — but the tofu allows you to ditch the butter, eggs and dairy while still providing substance and body. Tofu is flavorless, and that’s a good thing here: It simply takes on the flavor of whatever you add to it.
Even non-bakers will be able to handle this one. You simply blend everything together in a food processor (or blender) and pour it into a prepared pie shell. Top it with pecans, and bake it. No mixer. No separate bowls. Just a straightforward, simple process that yields a super-quick, last-minute dessert for any dinner party — and no one will guess that it’s vegan.
