Want to surprise your family and serve a Louisiana seafood favorite for dinner? Chef Rusty’s chargrilled oysters will transport your taste buds to the Gulf Coast and forever change the way you eat this succulent mollusk.
Celeb Chef Rusty Hamlin, executive chef for the Zac Brown Band and restaurateur, loves his Southern roots and wants to show how to can make good ol’ Southern cooking right in your own kitchen. These chargrilled oysters are one of his favorite ways to chow down on this Southern delicacy.
What makes these chargrilled oysters so tasty?
Chef Rusty starts with a lip-smacking delicious garlic sauce made with butter, garlic, lemon juice, parsley and three types of pepper — black, white, and cayenne. After the sauce is hot and bubbling, he splashes it with white wine (whatever white wine you have in your fridge will work).

Fry ’em up
Chef Rusty cooks oysters in the half-shell on the hottest part of the grill, spooning them with the garlicky oyster sauce. Then he generously sprinkles each oyster with a mixture of parsley and freshly grated Parmesan and Romano cheeses. When the cheese is melted and a nice golden brown, the oysters are ready to plate.

One more expert recommendation…
Chef Rusty recommends serving chargrilled oysters with a simple side of toasty bread and extra garlicky oyster sauce. We suggest making a double portion of this sauce so you have enough to drizzle over the oysters and use as a dip for the bread. This is one fancy meal that is actually quite easy to make.
No reason to wait to visit a restaurant to enjoy it. Simply follow Chef Rusty’s recipe and treat your family to a chargrilled oysters meal whenever the craving for Southern seafood arises.
