Nothing beats homemade hot chocolate, especially whThe presentatione with real chocolate. Since the natural brown color of cocoa powder, milk chocolate and dark chocolate would be too dark to turn pink, we use white chocolate. Presentation is key when it comes to unicorn hot chocolate. So don’t leave out the blue frosting!
To begin, make the chantilly cream. This is a sweetened whipped cream. In the chilled bowl of a standup mixer with the whisk attachment, combine the heavy whipping cream, vanilla and sugar. Having everything at a low temperature will give you a greater volume of whipped cream compared to cream that is whipped at room temperature. Whip the ingredients until the cream billowy firm peaks appear. Set your creme chantilly aside.

Make blue frosting
Frosting a blue hue helps make unicorn hot chocolate particularly attractive. If you have the time and inclination, make a small batch of buttercream frosting and use blue food coloring or blue icing color to turn your white frosting into a beautiful blue. You can also use the food color to dye white store bought frosting.
Make hot chocolate
In a saucepan over low heat, combine milk, vanilla, sugar, chopped white chocolate and pink food coloring. Stir this deliciously rich mixture until the white chocolate is melted.
Decorate the rim of the mug
Use the blue frosting to line the rims of two mugs then dip the rims into the pastel sprinkles to generously coat.
Pour and garnish

Unicorn hot chocolate

Ingredients
Crème chantilly
- 1 cup chilled heavy whipping cream
- 1 teaspoon pure vanilla extract
- 1 tablespoon plus 1 teaspoon superfine sugar*
Blue frosting
- 1/2 cup homemade or premade frosting
- Blue food coloring
Hot chocolate
- 2 cups whole milk
- 1 teaspoon pure vanilla extract
- 1 tablespoon superfine sugar
- 4 ounces white chocolate, chopped
- Pink food coloring
- Pastel sprinkles
- Colored mini marshmallows
*Superfine sugar is finer than granulated sugar but not quite powdered sugar. Most large grocery stores have started to carry it.
Instructions
Crème chantilly
- In the chilled bowl of a standup mixer fitted with the whisk attachment, combine whipping cream, vanilla extract and sugar.
- Whip the ingredients until firm peaks appear. Set aside.
Blue frosting
- Using a homemade or premade frosting, add enough blue food coloring to get the color you desire.
- Mix well and set aside.
Hot chocolate
- In a medium-sized saucepan over low heat, combine milk, vanilla extract, sugar, white chocolate and two drops of pink food coloring.
- Stir milk mixture constantly until white chocolate is melted and the sugar has dissolved. Remove from heat.
- To prepare the mugs, line the mug rims with blue frosting then dip into sprinkles.
- Pour warm hot chocolate into mugs and top with creme chantilly, sprinkles, mini marshmallows and a little extra frosting, if desired.
